4 6-ounce fillets of firm white fish, such as flounder, cod, or turbot
1 Tbsp extra-virgin olive oil
1/4 cup packed fresh Italian (flat-leaf) parsley
1 garlic clove, chopped
1 Tbsp chopped lemon or orange zest
Salt and pepper to taste
- Preheat the oven to 450° F. Arrange the fish on a large baking sheet, drizzle with olive oil and season with salt and pepper.
- Using a food processor or chef's knife, finely chop the parsley, garlic, and zest together. Sprinkle evenly over the fish.
- Bake until opaque, about 10 minutes.
